 Ingredients:

                                                                     Crust

  • 1 ½ cups (150g) blanched almond flour
  • ¼ cup (55g) melted salted butter

                                                                      Filling

  • 2/3 cup (150g) cream cheese (room temperature)
  • 1 cup (225g) mascarpone cheese
  • 2 tablespoons (30g) unsalted butter
  • 1/3 cup (65g) granulated erythritol
  • ¾ cup (180ml) heavy whipping cream
  • 2 eggs
  • ¼ cup (45g) powdered erythritol
  • ½ teaspoons (2ml) vanilla extract
  • 1 tbsp fresh lemon juice
  • ¼ tsp salt
  • 1 teaspoon (4g) xanthan gum                  

                                                               Topping 

  • ¼ cup fresh strawberries
  • ¼ cup blueberries
  • ½ cup lemon slices

Method

  • Preheat the oven to 350°F for around 15-20 minutes and start by mixing almond flour and powdered erythritol. Add melted butter to these dry ingredients until it becomes a crumbly but well-combined mixture.
  • Use a standard muffin pan or muffin tin cupcakes paper or silicone liners. Place the 1-2 teaspoons crust mixture in each liner and press it gently with a spoon.
  • Let these crusts bake at 325 ̊F (163 ̊C) for 10-12 minutes or until the edges are golden brown.
  • The crust will puff up after baking, so press it down again.
  • To make the cheesecake filling, add mascarpone cheese, unsalted butter, granulated erythritol, and salt in a bowl, whisk it until it combines.
  • Then add heavy cream and beaten eggs, whisk it until turns into a smooth mixture,
  • After mixing it, add erythritol or your favorite low carb sweetener, and remix it.
  • Next, add vanilla extract, fresh lemon juice and sprinkle xanthan gum and mix one last time until it thickens.
  • Spoon over the cheesecake filling onto the baked crusts one by one and brush the top with egg wash.
  • Bake at 350 ̊F (176 ̊C) for about 15-20 minutes; the cheesecakes will puff up and be set.
